I was totally planning on posting this recipe before New Years! I’m sure it would have come in handy for your little shin dig, I am sorry I’ve failed you. But hey! Better late than never right!?
Welcome to the glorious and unbelievably delicious Cranberry Cashew “Cheese” Ball!
In your blender, blend together:
- 3 Cups of raw cashews that have been soaked overnight
- 3 Tbsp Coconut Oil
- 1/4 cup of nutritional yeast
- 1/2 cup of lemon juice
- Tbsp of salt
Blend until completely smooth and then using a cheesecloth or plastic wrap, roll into a ball and chill in the freezer for about an hour.
Once the ball is chilled and easier to handle, crush up these ingredients:
- 1 cup pecans
- Add 1/4 cup cranberries to the crushed pecans
Roll your cheese ball in the crushed pecans and cranberries and once again chill for about an hour.
Serve on your favourite crackers with cranberry sauce to top it off! YUM!
